I actually have both of his albums, autographed no less. Good shit.
Couple bands I hadn't heard of until recently that I like:
The Lord Weird Slough Feg
Maylene & the Sons of Disaster

How about folk metal tying in a Western theme and even a fucking banjo.
If you are impatient skip 3 min into the song. Can also look up "Iron" from them.
Or how about what some would call "gypsy metal."
Check out "Rasputin" as well.

Bringing back Ensiferum...it's probably the most posted thing in this thread, that and IM maybe.
My favorite song by them has got to be Eternal Wait though.

Oh and if we're talking about Ensiferum, let's look at where Petri (main vocalist for them since 2004) came from

Norther was so awesome before they decided to try to emulate Children of Bodom and their "im so hardcore and badass" image change and ended up sucking as much as CoB does now. Death Unites us and after were horrible.
Ensiferum is awesome both with both Jari and Petri, but Iron takes the cake.
Turisas is great too, my fav from them is:

We need some Wintersun, Cadacross, Dissection, Borknagar, (more)Einherjer, and Immortal. All the songs that I first heard from samplers and friends.
2min into this song I bled heaven out of my ears when I heard this shit.
I feel obligated to put more black metal in here now.
Also, I forgot to mention "space" metal... like Asterius, unfortunately there is nothing on youtube for my favorite song of theirs, "Frozen Zodiac," but I do have a link for it. http://www.myspace.com/video/vid/3980499
Then there is Arcturus.I really don't know what vibe they go for.

Moonsorrow, YES!
And I left Old Man's Child for tier to use. I am surprised by how much you like Nile.
